Root Beer (Soda1)

First time making a rootbeer. No alcohol, 2.5 gallons, lots of herbs/spices and some rootbeer extract.

Inspiration for Root Beer (Soda2)

Boil for 20 minutes

At 140 minutes
0.5 ounces of Licorice Root (Put herbs/spices in grain bag at 90°. Let water get up to 165° before taking out. Med/high heat. Let steep at 140° for two hours.)

0.25 ounces of Juniper Berry
At 140 minutes

0.25 teaspoons of Nutmeg

8 ounces of Molasses (After steeping for two hours, the herbs/spices were removed and the mixture was brought to a boil for 20 minutes. Blackstrap, unsulfered molasses.)

Tasting notes

2014-03-16
No carbonation yet. Molasses is strong. Sweetness is good, glad no more sugar was added. Licorice sweetness lingers. Would like more spices, especially earthy, root flavors. We forgot to add salt. We added a pinch to the tasting and the sweetness went way down. Definitely need to add it next time.
