Over the past few days, I've ramped up the temp to 68°. Now, I'm slowly lowering the temp to 33°.
2018-02-19
Kegged. Pale, golden, yellow, a bit hazy. Sweet, semi-floral aroma, sweet cracker, a bit nutty, maybe a bit of peanut butter as is advertised. Flavor has some light nuttiness, a bit of honey. Very clean.
Mash
[100.00%] 8 pounds of Maiden Voyage Malt (AdmiralMaltings)
Single infusion mash. Mashed with 3 gallons (1.50 quarts per pound) of reverse osmosis water for 60 minutes. 8lb of grain was used in the mash.
Strike water temp: (0.2/1.50) * (151 - 68) + 151 = 162.1
0.09g calcium chloride, 0.18g gypsum, and 0.15g chalk added to water
After 0 mins
mash is 144°; The temp is really low, so I boiled some water and added it after 20 minutes.
After 20 mins
mash is 150°; pH is 5.49; No salts were added to the water addition.
After 40 mins
mash is 147°; pH is 5.50
After 60 mins
mash is 147°; pH is 5.49
Sparge
Sparged for 42 minutes with 5 gallons of 170° reverse osmosis water.
0.15g calcium chloride, 0.30g gypsum, and 0.02mL lactic acid added to water

pH is 5.50; specific gravity is 1.045
After 40 mins
pH is 5.69; specific gravity is 1.017
After 42 mins
pH was getting high, so I stopped the sparge and topped off with ~1.5 gallons of sparge water. Pre-boil wort pH was 5.57
Yeast

Pitch 1 pack of Saflager S-23 Lager Yeast (Fermentis) at 50°. (Rehydrated the yeast.)

[6/10] Not fully carbed. Pale yellow, some haze, white head. Sweet nutty, slightly bready, honey aroma. Very thing. Honey+nut flavor.

[7/10] Cracker, nutty, slightly floral aroma. Some bitterness, has some cracker flavor, it reminds me of some macro light lager, but it's difficult to describe. Very good clarity, light yellow color. Decent body. Good lacing. Rafts of white bubbles persist on the top. Some bitter finish. Not grassy, but similar.

[6/10] Last pour. Great clarity. Yellow, white head. Light hay, slightly nutty, light toast, very low bitterness, but not sweet either. Nothing stands out, easy drinking, clean profile.
