Second runnings from CC. Added 3 gallons of water to CC's mash and sparged what I could. I'll most likely end up throwing in some fruit to this.

Preboil gravity: 1.025

Original gravity: 1.030

Final gravity: 1.005

ABV: 3.3%

Apparent Attenuation: 83.3%


Parti-gyle first beer was Beam Me Up Scotch Ale (CC)

Process notes

2022-02-22
11:00am. Temp dropped to 68°. Some bubbles through the airlock every 5 minutes or so. No noticeable fermentation in the wort.
2022-02-28
Decent activity in the airlock. Very minor krausen on top. The beer is extremely clear, though, as there's a huge mass of trub floating just below the surface

A bit of a pellicle is starting to form. Small white patches and a very thin layer of film in some places.

Took a sample. This has been sitting in a carboy, covered by a blanket, in the sewing room since it was brewed.

Great clarity, golden yellow. Maybe the slightest barnyard funk in the aroma. Light body, very light beer. Nothing really off about this; I should probably keg it soon. Maybe a little bit of grassy astringency. Tastes like a really light Belgian blonde.

I'll probably add the nectarines at some point.

Kegged. Nice golden yellow color; decent clarity. Some sweetness in the aroma, something's familiar, but I can't quite put my finger on it. Doesn't seem to have a noticeable off aroma, so I may have lucked out.

Light body, the flavor profile is actually pretty clean. No acetic acid, thankfully. Not getting any funky notes, unfortunately.

Very thin, watery. This might be OK with a ton of carbonation, but right now, it doesn't have a ton of character.

The keg has been sitting in the sewing room for over two years. Today, I finally put it on.

Boil for 30 minutes

At 30 minutes
1 ounce of 4.5% Alpha Acid Styrian Goldings (Celeia) pellets
At 15 minutes

Sparge

Sparged for 22 minutes with 3 gallons of 68° reverse osmosis water. (Added 3 gallons of water to the remaining mash from CC.)

1.00g calcium chloride, 1.50g gypsum, and 1.00mL lactic acid added to water

After 0 mins
pH is 5.20; specific gravity is 1.052
After 8 mins
pH is 5.34; specific gravity is 1.023
After 22 mins
pH is 5.35; specific gravity is 1.022; Sparge ran out of water at this point.

Pitch 1 pack of 3763 Roeselare Belgian Sour Blend (Wyeast) at 72°. (Pitched a bit warm since the carboy is just sitting in the sewing room without any cooling.)
