Habanerost (HotSauce1)
Fifth or sixth time making a hot sauce, but this is the first time I've documented it. A few home grown, but not really great looking, ghost peppers and some store bought habaneros. Keeping this one simple with just peppers, water, salt, and apple cider vinegar.

Used an immersion blender directly in the stein. Poured into small pot, covered, put on hot plate, and let simmer for ~10 minutes. Strained using small strainer, put into big measuring cup. Wound up with ~2 cups of hot sauce. Filled three 5oz bottles. Nice orange color.
The following ingredients were fermented together
At 0 minutes
1 cup of Water (RO water was boiled and dumped into the Gordon Biersch stein and let to cool while I cut up the peppers.)
At 0 minutes
2 tablespoons of Table Salt (Dumped into the stein after the boiling water was poured in. I didn't mix it up too well. Next time, I'll put it in the pot of water to dissolve.)

14.3 grams of Ghost Pepper (This was from 5 homegrown peppers. The weight was measured after the stems and seeds were removed. The peppers weren't great looking as there was some yellow on them.)

173.5 grams of Habanero (~2 dozen orange habaneros from Zonattos were used. The weight was taken after they were destemmed and deseeded.)

0.5 cups of Apple Cider Vinegar (Marukan Organic Apple Cider Vinegar w/ mother dumped into stein after water and peppers were added. Stein was then covered in aluminum foil and put in the cupboard.)

0.25 teaspoons of Xanthan Gum. (Added straight to the stein right before blending.)

[7/10] First time trying this. Dumped a bunch on some jambalaya. Not as thick as some of the others I've made, so this seems like the right amount of xanthan gum. Decent amount of vinegar, and definitely a lot of heat. I'll use this sparingly. Pretty happy with it, though.

Its been about 10 minutes since first trying this and the heat is lingering. This is definitely hotter than I was expecting. Happy to have it, though
