Process notes
2012-12-15
OG seems about 1.060, higher than expected. Probably need to add more water in carboy.
2012-12-15
Yeast may have been added before wort was cool enough.
2012-12-15
The wort has a strange sediment floating in it similar to the sediment seen in a miso soup. Perhaps it will settle to the bottom, and maybe I should have stirred while it was boiling.
2012-12-15
Sediment settled within a few hours.
2012-12-16
Fermentation has started this morning.
2012-12-30
Bottled. Boiled 4oz of corn sugar and added to bottling bucket before bottling. Made 19 bottles. Probably left too much in carboy and bottling bucket.

Lessons learned:
1) Warm malt by putting bag in warm water. This will make it easier to get of of the bag.
2) The hope pellets expand, so leave more room in bag when steeping.
3) Don't put lid on while boiling.
4) Make sure to fill 5 gallons in carboy w/ extra water.
5) Boil last few gallons of water that go in carboy before fermentation.

[1/10] Trying the first beer. Swirled the sediment in the glass. Tastes and smells a bit sour, tastes a bit like cider. Not bad, but no real depth. Definitely sweet, no hops/bitterness.

[1/10] Had one in the fridge for a while. It poured a pretty clear yellow/amber, taste is still sour with little-to-no head.
