Process notes

2015-10-26
Racked to 3gal fermenter and added the built-up Saison Bernice dregs. S.G. 1.016. Sample smells fruity, floral, and like honey. A tad bit of nail polish remover is present. Flavor is fairly fruity; raisin.

Kegged. Dark brown, good clarity. Some dark fruit, sour cherry flavor. Not sure if this will be any good.

Boil for 60 minutes

8 ounces of CaraBelge (Weyermann) (Grains were added to 3 gallons of carbon filtered tap water which sat overnight w/ 1/2 Campden tablet.)

Pitch starter (started on 2015-02-16 with 500mL water, IntermittentShaking, 50 grams DME, 1.00 tsp FermaidK) made from 1 pack of Sante Adairius Saison Bernice Dregs at 70°. (2015-2-20: No fermentation was shown. Added previous starter to new 1L, 100g DME, 1tsp Fermaid K starter. Original starter tasted very malty, so no real activity took place.

2015-2-22: 1/2 inch white pelicle has formed.

2015-9-28: 1.2L water, 120g DME, 1 tsp FermaidK. Starter has been sitting @ room temp the last 7 months! Extremely Acetic. Will probably dump.)

[5/10] Dark brown, copper color. Off-white head. Needs more carbonation. Acetic, dark sour cherry, tart, not much funk aromas. Sweet-sour cherry candy flavor. Not bad, but something (mostly?) in the background that I'm not liking. Similar off flavor in the barrel-aged flanders (W), but not as strong. Slight nail polish in aromas as it warms. Drinkable, but not great.

[5/10] Last pour. Dark, ruby red. Great clarity. Head dissipates quickly. Musty, dark sour, cherry aroma. Slightly acetic. Kind of earthy. Some Sudzers described a burnt sugar flavor. Complex, interesting beer, but I can't drink a lot of it.

[6/10] I've had this last bottle for a long time. It's been in and out of fridges/fermentation chambers and temp has fluctuated a lot.

A tiny hiss when it opened. Great ruby red color, no head, just a few bubbles. Cherry and sherry. Dry, and not getting acetic acid. Some tartness, but not much. The dark cherry/sherry notes dominate. Fruity. Really not that bad.
