Racked to secondary and dry hopped. S.G. is 1.007. Beer is a very clear, pale yellow color. Grapefruit, not a lot of bitterness, which is good since there's a lot of malt character. A bit of vegetal character, but not bad. Bitter, grapefruit finish.

Kegged. Well flocculated, clear beer. Sharp bitterness, similar to the Heady Topper clone. So, maybe it's not the yeast(?) because I'm getting that nutty(?) flavor from the bitterness.

[11.76%] 1 pound of 2-Row (GreatWesternMalting)

[5.88%] 8 ounces of Caravienne (DingemansMalting)

1.50g gypsum added to water

Sparge

Sparged for 30 minutes with 4 gallons of 170° tap water. (Wort aroma is pleasant, hoppy citrus, a bit of the harsh bitterness on the finish.)

[7/10] Melon aroma, chill haze, harsh bitterness is gone. Easy drinking, really enjoying this beer, would definitely do this again. Need to be more careful siphoning to keg, though, since I picked up too much hop matter and clogged the siphon.

[7/10] This has been a good beer, but the brightness and freshness of the hops has faded.
