Process notes

2017-10-16
Temp dropped to 49° in the morning.
2017-11-05
Fermented @50°; moved to spare bedroom closet. This resulted in lots of bubbling over the next ~5 days.

Moved back to chest freezer and slowly got temp to 35°.

Kegged. A bit of haze. Golden yellow. Orange (bitter) and alcohol on the nose. Orange zest. Bitterness is a bit harsh, but not too bad. Nothing off.

Boil for 90 minutes

While sparging
1 ounce of 11.6% Alpha Acid Columbus pellets
At 10 minutes
2 ounces of 11.8% Alpha Acid Citra pellets
At 0 minutes
2 ounces of 11.8% Alpha Acid Citra pellets
While cooling
2 ounces of 11.8% Alpha Acid Citra pellets (Added when temp dropped to 180° while cooling.)

Mash

[98.32%] 11 pounds of German Pilsner (Weyermann)

[1.68%] 3 ounces of Acidulated Malt (Weyermann)

Single infusion mash. Mashed with 4.25 gallons (1.52 quarts per pound) of reverse osmosis water for 90 minutes. 11lb 3oz of grain was used in the mash.

Strike water temp: (0.2/1.52) * (153 - 68) + 153 = 164.2

4.25g calcium chloride added to water

mash is 152°; specific gravity is 5.410

Sparge

Sparged for 60 minutes with 5 gallons of 170° reverse osmosis water.

5.00g calcium chloride and 0.25mL lactic acid added to water

pH is 5.18; specific gravity is 1.079

pH is 5.21; specific gravity is 1.061
After 45 mins
pH is 5.30; specific gravity is 1.026
After 60 mins

[6/10] Orange, yellow, and still pretty hazy. Decent lacing, white head, persistent layer of bubbles on the top. Unique orange, melon, floral aroma. Ripe tropical. Thin mouthfeel. Sweet cracker, with some orange blossom. Maybe honey. Sweet than I'd like right now. Maybe balance the chloride/sulfate ratio.

[5/10] Thick, white head. Very good head retention and lacing. Very hazy, amber (almost some greenish color). Soft orange aroma. Bitter orange peel, sharp pineyness. Fairly thick mouthfeel now. Bitterness is pretty sharp, not pleasant. This is definitely past it's prime. I wonder if the harsh bitterness is from the Columbus? Some bitter melon. The full, almost creamy mouthfeel is really surprising. Infection? Too much carbonation?

[5/10] Last pour. Sweet pineapple. Still somewhat hazy. Thick white persistent head. Strong honey aroma. Mouthfeel seems to have increased over time. Very sweet. Sweetness is surprising.
