8:00am visible fermentation; tiny white patches of bubbles, 49°.

Transferred to closet. Took longer than expected before diacetyl rest due to Thanksgiving vacation.

Kegged at nighttime. This has been sitting at room temp. O-ring from keg lid fell in keg w/ beer in it. oh well. Sample smells like super bright lemon cleaner, some alcohol heat, a bit of stonefruit. Hazy, yellow, lots of hop matter. Taste is pretty harsh w/ the hop matter bitterness, but lots of citrus flavors. Bitter orange peel. Hopefully the bitterness mellows.

1 ounce of 11.9% Alpha Acid Magnum pellets

[98.32%] 11 pounds of German Pilsner (Weyermann)
[1.68%] 3 ounces of Acidulated Malt (Weyermann)
Single infusion mash. Mashed with 4.25 gallons (1.52 quarts per pound) of reverse osmosis water for 90 minutes. 11lb 3oz of grain was used in the mash.
Strike water temp: (0.2/1.52) * (153 - 68) + 153 = 164.2
4.25g calcium chloride added to water

Sparge
Sparged for 90 minutes with 5 gallons of 170° reverse osmosis water.

[7/10] Good Citra character. Cleared up, but hop particles are still floating. Maybe the fallen o-ring? Some lacing, thin white layer persists. Pineapple, a bit grassy, medium bodied, decent mouthfeel. Bitterness on back of throat on the finish. Golden-yellow. Lemon zest/pith.
