Bell's Two Hearted Clone (BA)

Got a small vial of Bell's yeast from Cliff. Propped that up in an attempt to make a Two Hearted clone.

2018-03-26
Vigorous fermentation by morning. Definitely need blowoff. Fermented at ~66°.
2018-04-13
Kegged. Orange, hazy. Orange zest. Sweet orange flavor, low bitterness. Aroma isn't super strong, but flavor is solid. No harshness at all.

Boil for 75 minutes

Mash

[75.47%] 10 pounds of 2-Row (Briess)

[20.75%] 2 pounds 12 ounces of American Pale High Color Malt (GreatWesternMalting)

[3.77%] 8 ounces of Caramel 40L (Briess)

Single infusion mash. Mashed with 4.5 gallons (1.36 quarts per pound) of reverse osmosis water for 60 minutes. 13lb 4oz of grain was used in the mash.

Strike water temp: (0.2/1.36) * (150 - 68) + 150 = 162.1

4.50g gypsum added to water

Sparged for 52 minutes with 4 gallons of 170° reverse osmosis water.

Pitch starter (started on 2018-03-23 with 1000mL water, StirPlate, 100 grams DME, 0.25 tsp FermaidK) made from 1 pack of Bell's House Yeast (from Cliff) at 66°. (Added the previous starter to this. Decanted 1/2 of the starter before pitching.)

Pitch starter (started on 3018-03-21 with 200mL water, IntermittentShaking, 20 grams DME, 0.25 tsp FermaidK) made from 1 pack of Bell's House Yeast (from Cliff) at 66°. (This is the first part step of the starter. The vial of yeast was given from Cliff on 3/11/2018.)

Dry additions

[7/10] Bright, orange aroma that's probably fallen off, but still not bad. Great lacing, good head retention. Medium-light body. Slightly hazy, dark orange. Looks like honey.

[7/10] Amber, copper orange, pretty good clarity, but not brilliant. Some lacing, persistent layer of white, small bubbles. Floral orange, mango, hints of pineapple aromas. Nothing unpleasant in the aroma, but it seems "soft". Fairly sweet flavor. Honey, orange candy. Some bittersweet pine.
