Faircliff Ale (Homegrown Hop Sierra Pale Ale Clone) (BP)

First time using my homegrown Cascade hops. This will be a split batch with BQ.

Original gravity: 1.044

Final gravity: 1.010

ABV: 4.5%

Apparent Attenuation: 77.3%

Boil for 90 minutes

At 90 minutes
1 ounce of 5% Alpha Acid whole cone Cascade (All hops were my homegrown wethops. I'm really not sure of the alpha acid.)
At 60 minutes
1 ounce of 5% Alpha Acid whole cone Cascade
At 30 minutes
1.75 ounces of 5% Alpha Acid whole cone Cascade
At 15 minutes
At 0 minutes
1.75 ounces of 5% Alpha Acid whole cone Cascade

Mash

[92.19%] 14 pounds 12 ounces of 2-Row (GreatWesternMalting)

[7.81%] 1 pound 4 ounces of Crystal 60L (GreatWesternMalting)

Single infusion mash. Mashed with 6 gallons (1.50 quarts per pound) of reverse osmosis water for 60 minutes. 16lb of grain was used in the mash.

Strike water temp: (0.2/1.50) * (155 - 68) + 155 = 166.6

1.80g calcium chloride, 3.90g gypsum, and 0.90g chalk added to water

After 0 mins
mash is 164°; I really have no clue why this temp is so high.
After 30 mins
mash is 161°
After 60 mins
mash is 160°

Sparge

Sparged for 45 minutes with 8 gallons of 170° reverse osmosis water.

2.50g calcium chloride and 5.20g gypsum added to water

After 0 mins
pH is 5.24; specific gravity is 1.077
After 15 mins
pH is 5.21; specific gravity is 1.042
After 40 mins
pH is 5.27; specific gravity is 1.011
After 45 mins
pH is 5.36; specific gravity is 1.009; Stopped the sparge and topped off with ~2 gallons of water. SG before top off was 1.046 and 1.038 after.

Yeast

2019-09-02
Pitch starter (started on 2019-09-01 with 1600mL water, StirPlate, 160 grams DME, 1.00 tsp FermaidK) made from 2 packs of WLP001 California Ale (WhiteLabs) at 66°. (Half of this starter will go in this beer and half will go in BQ.)

[4/10] Final pour. Yes, it's been a year. Bills are AFC East champs. Beer is fairly thin and sweet. No hops really came through. Kind of reminds me of 805. Good lacing and head retention. No infection or off flavors after all this time. Some strawberry sweetness. Definitely not enough hops.
