Sichuan Chile Oil (ChiliOil6)

Similar to (ChiliOil4) this was split in to two containers; one for my father. The main difference with this one is that I toasted some of the spices before adding them to the oil.

At this time, I also started toasting the spices.

Heat the oil for 66 minutes

575 milliliters of Vegetable Oil (Signature Select brand; 100% soybean oil.)

50 milliliters of Grapeseed Oil (La Tourangelle brand.)

8 grams of Star Anise (About 8 stars.

The star anise, cinnamon, and peppercorns were all toasted for about 5 minutes in a stainless steel pan.)

19 grams of Cinnamon Stick (About 1.5 sticks. Toasted with the star anise and peppercorns.)

1.5 tablespoons of Green Sichuan Peppercorn (D.M.D. Brand. Toasted with the star anise and cinnamon.)

4.5 tablespoons of Red Sichuan Peppercorns (Natural Plus Green brand from Amazon. Toasted with the star anise and cinnamon.)

3 Bay Leaf (Added directly to the oil; not toasted.)

Dry additions

2.25 teaspoons of Table Salt. (Kosher salt, which I put in the mortar and pestle so that there wouldn't be any large granules.

1.5tsp were put in the regular, large jar, and 0.75tsp were put in the second, 8oz mason jar.)

8oz were put in the regular jar, and 4oz were put in the 8oz jar.)

1 tablespoon was put in the regular jar, and 0.5 tablespoons were put in the 8oz jar.)
