Process notes

2013-08-06
This has been fermenting 75-80°. Bottled 25 22oz bottles. Strong ginger, spicy aroma, not bad but hopefully it mellows. Taste isn't as strong, but it finishes spicy.

Boil for 90 minutes

1.25 ounces of 4.5% Alpha Acid Hallertau Mittelfruh pellets

2 grams of Paradise Seed (Ground up a bit with mortar and pestle )

1 ounce of Coriander Seed (Ground up a bit with mortar and pestle)

0.75 ounces of Ginger (Fresh and grated)

0.75 ounces of 4.5% Alpha Acid Hallertau Mittelfruh pellets

Mash

[85.71%] 9 pounds of German Pilsner (Weyermann)

[4.76%] 8 ounces of White Wheat (GreatWesternMalting)

[4.76%] 8 ounces of CaraMunich Type I (Weyermann)

[4.76%] 8 ounces of German Munich (Weyermann)

Single infusion mash. Mashed with 4 gallons (1.52 quarts per pound) of tap water for 90 minutes. 10lb 8oz of grain was used in the mash. (After 90 minutes, temp was ~148 degrees)

Strike water temp: (0.2/1.52) * (150 - 75) + 150 = 159.8

Sparge

Sparged for 30 minutes with 3 gallons of 170° tap water.

Yeast

2013-07-13
Pitch starter (started on 2013-07-11 with 1000mL water, IntermittentShaking, 100 grams DME, 0.25 tsp FermaidK) made from 1 pack of GY018 Saison #1 (GigaYeast) at 72°. (Made starter from the yeast collected from the other Saison (H). Put in closet after pitching, want to ferment warm. )

2013-10-12
[6/10] Cloudy dark yellow/orange color, white head. Lemony, coriander aroma, not getting as much of the ginger as before; aroma is pleasant, smells a bit like ginger ale, though. Flavor isn't as good as aroma, astringency? Long, bitter finish. Maybe I shouldn't have fermented so warm? Very dry.

Very clear, dark yellow/orange color. White, medium bubbles that stay around edges of glass. No lacing. Spicy aroma, ginger, coriander, and paradise seed seem present. Can't notice orange peel. Bubbly mouthfeel, taste is similar to aroma, maybe ginger slightly dominates. Bitter, almost medicinal finish; not particularly pleasant.

Turbid. Dark orange, lots of carbonation, decent lacing. Small head remains. Peppery spice.
2014-04-27
Appearance same as 3/18. Nice ginger aroma, a bit peppery. Flavor seems muddled and isn't pleasant. Weird bitterness. The beer clears up as it warms.
2015-07-05
Final bottle. Great clarity; crystal clear, golden white, fluffy head. The bitterness in the finish isn't pleasant, but this isn't too bad. Ginger is in the nose, orange peel bitterness seems to come through.
