Fermentation already occurring by this morning.

Kegged; nothing eventful. Temp had raised to 77° during fermentation and then slowly lowered to 70° by kegging time. There was no temp control during the past few weeks.

Hazy, dark yellow color. Aroma has some fruitiness: banana and apple/pear, and a bit of alcohol sweetness. Dry, citrusy, pineapple flavors. Tastes pretty clean and is easy drinking. Happy with how it turned out so far.

Mash

[85.71%] 9 pounds of German Pilsner (Weyermann)

[4.76%] 8 ounces of White Wheat (GreatWesternMalting)

[4.76%] 8 ounces of CaraMunich Type I (Weyermann)

[4.76%] 8 ounces of German Munich (Weyermann)

Single infusion mash. Mashed with 4 gallons (1.52 quarts per pound) of tap water for 90 minutes. 10lb 8oz of grain was used in the mash. (Temp after rest: 149 degrees)

Strike water temp: (0.2/1.52) * (150 - 75) + 150 = 159.8

Sparge

Sparged for 30 minutes with 3 gallons of 170° tap water.

Yeast

Pitch 2 packs of 3711 French Saison (Wyeast) at 75°. (Will just let the ambient temp in the chest freezer do its thing during fermentation.)

[7/10] Brilliant clarity, golden yellow, fluffy white head that remains. Some lacing. Lots of apple/pear aromas, kind of peppery. Although this is dry, it has sweet notes (floral). Some cider characteristics. Medium/light bodied. Very drinkable.
