Doing the wheat beer thing again, but this time with lychee instead of blood orange.

Process notes

2015-07-06
After pitching, the temp went down to ~66° after a few hours. Then to 63° overnight, but raised to 69° by 8pm. Fermentation is going strong with good krausen.

Turned down temp in freezer to 38°. This may have caused suction of the Starsan in the blowoff container into beer.

Kegged. Sucking in the Starsan didn't seem to cause oxidation, probably because since freezer was full of CO2. Hazy, orange, copper colored. Banana aroma. No perceptible Lychee. Grassy, sweet banana flavor with a weird, not great finish. Maybe clove/herbal?

Boil for 60 minutes

Target brand water. Put steeping grains in as well; let sit overnight. Bring water to a boil, but remove grains at 130 degrees.

0.5 ounces of 7.5% Alpha Acid Northern Brewer pellets

0.5 ounces of 5.7% Alpha Acid Northern Brewer pellets

1 teaspoon of Fermaid K
At 0 minutes
3 pounds of Lychee (3 pounds prior to peeling and de-pitting. After peeling and depitting, set in fridge overnight before brew day.

While waiting for the wort to boil, bring lychee to a low simmer.

[5/10] Last pour. Hazy, copper color. Off-white, creamy head. Decent lacing. Lots of fruity, banana aroma. Some interesting sweetness, line a banana runt. "Full" aroma. Medium=light mouthfeel. A bit watery actually. Some grassy bitterness on the finish. A bit wheaty. Not as much banana flavor as aroma.
