First time using my own mill and first time building up water. Using a recipe that I've done a few times in the past. Mill set at 4/100 inch. Got 10 gallons of water from Glacier dispenser; last maintenance 8/26/2015

1.25 ounces of 4.5% Alpha Acid Hallertau Mittelfruh pellets

Mash

[85.71%] 9 pounds of German Pilsner (Weyermann)

[4.76%] 8 ounces of White Wheat (GreatWesternMalting)

[4.76%] 8 ounces of German Munich (Weyermann)

[4.76%] 8 ounces of Caramel Munich 60L (Briess)

Single infusion mash. Mashed with 4 gallons (1.52 quarts per pound) of reverse osmosis water for 90 minutes. 10lb 8oz of grain was used in the mash.

Strike water temp: (0.2/1.52) * (150 - 75) + 150 = 159.8

1.20g calcium chloride, 2.50g epsom salt, 1.10g baking soda, and 0.60g chalk added to water

Sparge

Sparged for 45 minutes with 4 gallons of 170° reverse osmosis water. (After the sparge, topped off the wort with ~1-1.5 gallons Glacier water.)

1.20g calcium chloride, 2.50g epsom salt, and 0.25mL lactic acid added to water

pH is 5.70; specific gravity is 1.010

Yeast

Pitch 2 packs of WLP565 Belgian Saison (WhiteLabs) at 68°.

Dry additions

2 ounces of Rosehips and Hibiscus. (These were added to two cups of water and steeped at 150° for ~40 minutes. Added to keg after straining. Nice pink color, spicy/complex aroma. Should be good.)

[7/10] Peppery, berry, apple juice, floral aromas. Good lacing, but head dissipates fairly quickly. Lingering layer of fine bubbles. Amber/orange color. Smooth mouthfeel. Some alcohol heat. Peppery finish. Peppery, bitter, earthy, some sweetness, grape peel flavors. There's a lot of fruitiness in this beer (bitter strawberry?), but it's ahrd to say exactly what.

[6/10] Cleared up pretty well. Final keg pour. Slightly pink head, good lacing, head retention is decent. Lots of berry fruit w/ some pepper aroma. Dry, thin body. I go back and forth on whether I like this. I'll stick to the French Saison yeast, this is too peppery for me.
