My typical Saison recipe, this time brewed with an experimental Saison yeast that Gigayeast gave to us and then was propagated up by Jared.

Process notes

2016-07-02
Kegged. This fermented ~72°. Beer cleared well. Golden, copper orange. Peppery, slight alcohol, grassy, clove, banana aroma. Flavors are similar. Some alcohol heat. Not thin. Bitter, herbal dry finish.

1.25 ounces of 1.9% Alpha Acid Tettnanger pellets

Mash

[85.71%] 9 pounds of German Pilsner (Weyermann)

[4.76%] 8 ounces of White Wheat (GreatWesternMalting)

[4.76%] 8 ounces of German Munich (Weyermann)

[4.76%] 8 ounces of Caramel Munich 60L (Briess)

Single infusion mash. Mashed with 4 gallons (1.52 quarts per pound) of reverse osmosis water for 90 minutes. 10lb 8oz of grain was used in the mash.

Strike water temp: (0.2/1.52) * (150 - 75) + 150 = 159.8

1.20g calcium chloride, 2.50g epsom salt, 1.10g baking soda, and 0.60g chalk added to water

Sparge

Sparged for 90 minutes with 4 gallons of 170° reverse osmosis water. (Stopped the sparge a bit early and topped off with 1.5 gallons of water.)

1.20g calcium chloride, 2.50g epsom salt, and 0.50mL lactic acid added to water

[5/10] Golden, orange color. Good clarity, but not brilliant. Decent head retention; slightly off-white foam w/ a bit of lacing. Bright, floral aroma, maybe a bit of apple (doesn't seem like acetaldehyde, though), more of a sweet apple/pear. Aroma like a sweet white/rosé wine. Flavor is a dry, earthy bitterness that lingers. Some sweet honey flavor as well. Could be a kind of "Champagne" beer w/ lots of carbonation.

[3/10] Great clarity, dark orange/brown color. I've liked this less and less over time. Dry, grassy(?) flavor and aroma. Some burnt straw. This never improved over time. I dumped about 1.5 gallons of it. Some booziness as it warms. Not sure if the unpleasant flavor/aroma is the hops or yeast. Probably yeast?
