Process notes
2013-01-21
Kept the burner between med-medhigh. Thought the last beer tasted strange because malt was burnt.
2013-01-21
spent much longer cooling the wort, the off taste in the first beer was most likely due to me pitching the yeast at way too high a temperature
2013-01-21
made sure to top off with tap water to 5 gallons in carboy
2013-01-22
9:00am fermentation not noticeable but going good at 8:00pm
2013-01-22
10:00pm 1" krausen, small bubbles throughout
2013-01-23
10:00pm 4" krausen, looking good, smells of piney hops. Been between 68-72° each time I've checked
2013-01-27
11:00am fermentation has slowed down quote a bit, but 1" krausen still persists
2013-01-28
11:00pm krausen gone, but very low fermentation still happening

Bottled at 3:00pm; yielded 26 22oz bottles, still bubbling ~1 per minute. Nice roasted aroma, sweet/roasted taste, no sour/fruit taste/aroma like last time
Boil for 60 minutes

8 ounces of Black (Patent) (Briess) (burnt toast, coffee, charred aroma)
4 ounces of Chocolate Malt (Briess) (very similar to the Black Patent)
At 60 minutes
1 ounce of 9.5% Alpha Acid Northern Brewer pellets (earthy, grass, resin)
At 60 minutes
7 pounds of Ultralight Malt Extract (LME) (Brewmaster)
At 60 minutes
4 ounces of Maltodextrin (Brewmaster) (added w/ LME, not super sweet, tastes like protein powder)

Yeast

[5/10] The taste seems inconsistent. Some bottles seem to have a good roasted flavor and some not so much. Mouthfeel is watery and there's little head retention. More Black Patent & Carapils next time? Alcohol comes through but isn't too off putting.

[3/10] Overcarbed + buttery taste. Kind of soapy? Diacetyl?
